Henan night markets are a trip highlight, Kaifeng especially, called 'northern China's night-market zenith'.

◆ Four touring tips:
1. ◆ Ask price before eating: some stalls charge by skewer/portion; skipping this overruns budget.
2. ◆ Little of many: two people order 6–8 small items, richer than two big bowls.
3. ◆ Save room for signatures: soup dumplings and fried jelly are musts; ordinary skewers can wait.
4. ◆ Off-peak: before 19:00 fewer people, better photos; after 21:00 liveliest but packed.
◆ Avoid: 'night-market same-source' at scenic gates are knock-offs; trust the old-city official market blocks. With elders/kids watch hygiene — open-kitchen stalls, less raw-cold.
